For these high grade, delicate teas, only the youngest leaves are plucked. So young in fact, they still have a soft, downy covering. Processing of these leaves consists only of steaming or sometimes sun-drying. Because this unfurled, unaltered bud has never developed chlorophyll, white tea has a silvery, pale colored leaf, which when infused looks colorless. The per cup polyphenol content is rated the highest of any type of teas. Infusion produces an extraordinary, fresh, sweet, pale cup.
BREWING: Heat water to a steam. This prevents the tea from becoming bitter. Optimum temperature for infusion is between 140-150 degrees. Use one level tsp tea per 8 oz. cup. Infuse 2-3 minutes.
